Finnish beef stew is a hearty and comforting dish that is perfect for warming up on cold winter nights. Made with tender beef, root vegetables, and rich spices, this stew is filling and flavorful. The long, slow cooking process allows the flavors to develop and the beef to become incredibly tender. It's a perfect meal to share with family or friends during the colder months.

Ingredients:

  • 2 lbs. beef chuck, cut into 1-inch cubes

  • 2 tablespoons flour

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 2 carrots, peeled and chopped

  • 2 parsnips, peeled and chopped

  • 2 potatoes, peeled and chopped

  • 2 tablespoons tomato paste

  • 1 tablespoon paprika

  • 1 teaspoon dried thyme

  • 2 cups beef broth

  • 1 cup red wine

  • 2 bay leaves

  • Steamed barley or crusty bread for serving

Directions:

  1. Season the beef cubes with flour, salt, and pepper.

  2. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5 minutes. Remove from the pot and set aside.

  3. In the same pot, add the onion and garlic and cook until softened, about 5 minutes. Add the carrots, parsnips, and potatoes and cook for another 5 minutes.

  4. Stir in the tomato paste, paprika, and thyme. Add the browned beef back to the pot and mix well.

  5. Pour in the beef broth and red wine and add the bay leaves. Stir to combine.

  6. Cover the pot and simmer the stew over low heat for 2 hours, or until the beef is tender and the vegetables are cooked through.

  7. Serve the Finnish beef stew with steamed barley or crusty bread for dipping.

This Finnish beef stew is the perfect winter meal, warm and comforting on cold nights. The combination of tender beef, root vegetables, and rich spices creates a hearty and flavorful dish that will leave you feeling satisfied. Serve it with steamed barley or crusty bread to soak up the rich sauce. Enjoy!
