Ingredients:
2 lbs. beef chuck, cut into 1-inch cubes
2 tablespoons flour
Salt and pepper, to taste
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, peeled and chopped
2 parsnips, peeled and chopped
2 potatoes, peeled and chopped
2 tablespoons tomato paste
1 tablespoon paprika
1 teaspoon dried thyme
2 cups beef broth
1 cup red wine
2 bay leaves
Steamed barley or crusty bread for serving
Directions:
Season the beef cubes with flour, salt, and pepper.
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5 minutes. Remove from the pot and set aside.
In the same pot, add the onion and garlic and cook until softened, about 5 minutes. Add the carrots, parsnips, and potatoes and cook for another 5 minutes.
Stir in the tomato paste, paprika, and thyme. Add the browned beef back to the pot and mix well.
Pour in the beef broth and red wine and add the bay leaves. Stir to combine.
Cover the pot and simmer the stew over low heat for 2 hours, or until the beef is tender and the vegetables are cooked through.
