Ingredients:

  • 1 large eggplant, sliced

  • 1 lb. ground beef

  • 2 cloves garlic, minced

  • 1 can of diced tomatoes

  • 1 tsp. dried oregano

  • 1 tsp. dried basil

  • 1 tsp. salt

  • 1 tsp. black pepper

  • 1 cup beef broth

  • 1 cup all-purpose flour

  • 2 cups milk

  • 3 eggs

  • 1/2 cup grated parmesan cheese

Directions:

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.

  2. In a large skillet, brown the ground beef, onion, and garlic. Drain any excess fat.

  3. Add the diced tomatoes, oregano, basil, salt, pepper, and beef broth to the skillet. Let it simmer for 10 minutes.

  4. In a separate saucepan, make a roux by whisking together the flour and 2 tablespoons of butter over medium heat until it becomes a paste. Gradually add the milk, whisking constantly, until the mixture thickens.

  5. Beat the eggs in a small bowl and then stir them into the saucepan. Add the grated parmesan cheese.

  6. Layer the sliced eggplant in the bottom of the prepared baking dish. Pour the ground beef mixture on top of the eggplant. Finally, pour the béchamel sauce over the beef.

  7. Bake the moussaka in the oven for 30 minutes or until the top is golden brown. Let it cool for 10 minutes before serving.
